Heat the oil in a large pan over medium heat.
Add the garlic, curry leaves, and dried red chillies.
Stir-fry for about 2 minutes, or until they turn brown.
Add the mustard seeds.
Stir-fry for about 1 minute, or until they start to splutter.
Add the garlic paste.
Stir-fry for about 2-3 minutes, then add the chilli powder, vinegar and fruit and season with salt.
Reduce the heat to very low and simmer for 5 minutes.
Remove from the heat and allow to cool.
When cool, bottle into sterilized jars.
If you can’t find star gooseberries, for this recipe, you can use regular gooseberries.
