Kamrakh ka Achar

Ingredients
- 125 ml Vegetable oil (1/2 cup)
- 12 Garlic cloves
- 20 Curry leaves
- 4-6 Red chilies dried
- 1 teaspoon Mustard seeds
- 5 tablespoons Garlic paste
- 2 tablespoons Chili powder
- 1 tablespoon Malt (white) vinegar
- 250 g Star Goseberries cut in half and de-seeded
- Salt
Instructions
- Heat the oil in a large pan over medium heat.
- Add the garlic, curry leaves, and dried red chillies.
- Stir-fry for about 2 minutes, or until they turn brown.
- Add the mustard seeds.
- Stir-fry for about 1 minute, or until they start to splutter.
- Add the garlic paste.
- Stir-fry for about 2-3 minutes, then add the chilli powder, vinegar and fruit and season with salt.
- Reduce the heat to very low and simmer for 5 minutes.
- Remove from the heat and allow to cool.
- When cool, bottle into sterilized jars.
- If you can’t find star gooseberries, for this recipe, you can use regular gooseberries.
