Heat the oil in a kadhai or deep, heavy-based pan to 180°C / 350‘F, or until a cube of bread browns in 30 seconds.
Working in batches, carefully slice the plantain's halves directly into the oil. Alternatively, slice the plantain halves first and add them to the hot oil in batches.
Season with salt and deep-fry for 3-4 minutes, or until golden brown, then turn over and continue deep-frying for a further 3-4 minutes, or until crisp.
Remove with a slotted spoon and drain on kitchen paper (paper towels).
Allow to cool, then store in airtight containers.
