  • Put the onions in a handi or heavy-based pan.
  • Add the bay leaves, cardamom pods and 250ml / 8fl oz (1 cup) water.
  • Bring to the boil.
  • Then reduce the heat to medium and simmer for 20 minutes until the onions are transparent and the liquid has evaporated.
  • Transfer to a blender and process to make a smooth puree.
  • The paste can be stored for 24 hours in the refrigerator.
