  • Bring 250ml / 8fl oz (1 cup) water to the boil with vinegar, salt and sugar in a large pan.
  • Then remove from the heat.
  • Add all the vegetables and olive oil, then mix and season to taste.
  • Set aside for about 2 hours.
  • Then transfer to sterilized jars.
