Heat the oil in a kadhai or deep, heavy-based pan over high heat, then reduce the heat. Add the coriander seeds and stir-fry for about 1 minute, or until they start to splutter. Add the dried red chillies and stir-fry for about 1 minute, or until the chillies turn a shade darker.
Add the spinach, mix well, season with salt, stir once again, then reduce the heat to very low, cover, and simmer for about 10 minutes.
Uncover and simmer for about 1-2 minutes, or until all the moisture has evaporated.
