Melt the butter in a large, heavy-based pan over medium heat, add the dried red chillies and fry for about 2-3 minutes, or until glazed. Remove from the pan and set aside.
Reheat the butter over medium heat, add the onions, and stir-fry for about 2 minutes, or until the onions are translucent. Add the mushrooms and season with salt, then stir-fry over high heat for about 3 minutes, or until all the moisture has evaporated.
Add the green chillies, glazed dried red chillies, ginger strips, and stir-fry for about 2 minutes.
