Heat the oil in a frying pan (skillet) over medium heat.
Add the mustard seeds.
Stir-fry for about 1 minute, or until they start to splutter.
Add the chillies and a pinch of salt and stir fry for 2 minutes.
Add the tamarind extract and grated ginger and season with salt, if necessary.
Reduce the heat to low and cook for 5 minutes, or until the ginger is soft and extract thickens.
Remove from the heat and allow to cool.
Store in an airtight container.
