Stir-fry the sesame seeds in a dry frying pan (skillet) over medium heat for about 30 seconds, or until golden.
Remove from the pan and set aside.
Pour 1 tablespoon oil into the pan and heat through.
Add the dried red chillies.
Stir-fry for about 1-2 minutes, or until fragrant.
Remove from the pan and set aside.
Pour the remaining oil into the pan and heat through.
Add the dals and fry for about 1 minute, or until golden.
Mix all the ingredients together in a mortar and pound with a pestle.
Alternatively, grind in a spice grinder, to make a coarse powder.
Store in an airtight container and use as required.
