  • Press the colocasia between the palms of your hands.
  • Heat the oil in a kadhai, wok or deep, heavy-based pan over medium heat.
  • Add each colocasia to the hot oil.
  • Fry for 2 minutes on both sides until it is crisp and golden.
  • Remove from the pan with a slotted spoon and drain on kitchen paper (paper towels).
  • Put the yoghurt in a large bowl and add all the spices, then season with salt.
  • Add the fried colocasia and mix together.
  • Garnish with coriander leaves and serve.
