  • Heat the ghee or butter and oil in a medium-sized, heavy-based pan over low heat, add the potatoes, and season with salt. Cover and cook for about 15 minutes, or until the potatoes are cooked.
  • Sprinkle over 1 tablespoon water if the potatoes are browning too much. Uncover, add the peppers and simmer for a further 2-3 minutes. Mix gently before serving.
