Vazhaippazham Chips

Ingredients
- 750 ml - 1 litre Vegetable oil (3 1/4-4 cups)
- 1 kg Green bananas or plantains peeled and cut in half
- Salt
Instructions
- Heat the oil in a kadhai or deep, heavy-based pan to 180°C / 350‘F, or until a cube of bread browns in 30 seconds.
- Working in batches, carefully slice the plantain's halves directly into the oil. Alternatively, slice the plantain halves first and add them to the hot oil in batches.
- Season with salt and deep-fry for 3-4 minutes, or until golden brown, then turn over and continue deep-frying for a further 3-4 minutes, or until crisp.
- Remove with a slotted spoon and drain on kitchen paper (paper towels).
- Allow to cool, then store in airtight containers.
