Ingredients
- 1 kg Onions (7 medium), roughly chopped
- 3 Bay leaves
- 3 Black Cardamom pods
Instructions
- Put the onions in a handi or heavy-based pan.
- Add the bay leaves, cardamom pods and 250ml / 8fl oz (1 cup) water.
- Bring to the boil.
- Then reduce the heat to medium and simmer for 20 minutes until the onions are transparent and the liquid has evaporated.
- Transfer to a blender and process to make a smooth puree.
- The paste can be stored for 24 hours in the refrigerator.
