Ingredients
- 2 tablespoons Vegetable oil
- 1 teaspoon Cumin seeds
- 1 Coriander (Cilantro) large sprig, leaves only, chopped
- 1 tablespoon Garlic paste
- 4 Green chilies de-seeded and chopped
- 1 teaspoon Sugar
- 1 kg Whitebait or Herring gutted, rinsed, and patted dry with kitchen paper (paper towels)
- 2 tablespoons Lime juice
- 1 teaspoon Garam Masala
- Salt
Instructions
- Heat the oil in a pan over medium heat, add the cumin seeds and stir-fry for about 1 minute, or until they change colour.
- Add the chopped coriander, garlic paste, chilies, sugar, and season with salt. Fry for 1 minute.
- Add the whitebait or herring, stir to mix, and add the lime juice.
- Reduce the heat, cover, and simmer for 10 minutes, or until the fish is cooked. Sprinkle the garam masala over the top just before serving.
