Ingredients
- 500 g Aubergines (Eggplants) long, trimmed
- 3 tablespoons Mustard oil
- Salt
Instructions
- Slice the aubergines lengthways. Place in a large shallow dish, sprinkle with salt, and set aside for 30 minutes.
- Heat the oil in a kadhai or deep heavy-based pan over high heat.
- Reduce the heat, add the aubergines together with a little salt to the pan, cover and simmer for about 15 minutes, turning gently twice or three times until hot.
