  • Heat the oil in a frying pan (skillet) over medium heat.
  • Add the dals.
  • Stir-fry for about 2-3 minutes, or until fragrant.
  • Add the dried red chillies and sesame seeds and stir-fry for about 1-2 minutes, or until they start to splutter and are fragrant.
  • Add the asafoetida and stir-fry for 1 minute.
  • Season with salt.
  • Transfer all the ingredients to a mortar and pound with a pestle.
  • Alternstively, grind in a spice grinder, to make a fine powder.
  • Sieve (strain).
  • Store in an airtight container.
