Ingredients
- 1 kg (All-purpose) flour (8 cups) plain, plus extra for dusting
- 1 teaspoon Salt
- 250 ml Vegetable oil or Ghee (1 cup), plus extra for frying
- 2 tablespoons Black Peppercorns coarsely ground
Instructions
- Sift the flour and salt into a bowl, then mix in the oil or ghee, add the pepper and mix well.
- Slowly add enough water to make a stiff dough.
- Divide thedough into 16-18 equal portions.
- Roll out each portion on a lightly floured surface into a thick disc, about 8cm / 3 inches in diameter. Prick each disc on one side with a fork.
- Heat enough oil or ghee for deep-frying in a kadhai or deep, heavy-based pan to 180'C / 350”F. or untila cube of bread browns in 30 seconds.
- Working inbatches, drop 4 discs at a time carefully into thehot oil and deep-fry, turning frequently, for about 5 minutes, or until golden brown.
- Remove with a slotted spoon and drain on kitchen paper (papertowels). Allow to cool completely, then serve or store them in an airtight container.
