Ingredients
- 1 tablespoon Butter
- 2-3 Red chillies dried, wiped with a damp cloth
- 400 g Onions (2 1/2 cups), sliced
- 400 g Button (white) mushrooms large, stalks trimmed
- 2 Green chillies slit in half lengthways and de-seeded
- 1 Ginger 5-cm / 2-inch piece fresh, peeled, and cut into strips
- Salt
Instructions
- Melt the butter in a large, heavy-based pan over medium heat, add the dried red chillies and fry for about 2-3 minutes, or until glazed. Remove from the pan and set aside.
- Reheat the butter over medium heat, add the onions, and stir-fry for about 2 minutes, or until the onions are translucent. Add the mushrooms and season with salt, then stir-fry over high heat for about 3 minutes, or until all the moisture has evaporated.
- Add the green chillies, glazed dried red chillies, ginger strips, and stir-fry for about 2 minutes.
