Ingredients
- 1 kg Okra young, small, tender, topped and tailed (trimmed)
- 2 Onions large, sliced
- 1 teaspoon Turmeric ground
- 2 tablespoons Vegetable oil
- 2 Tomatoes medium-sized
- 4 Green chillies de-seeded and chopped
- Salt
- 2 tablespoons Coriander (Cilantro) leaves chopped, with tender stems, to garnish
Instructions
- Cut the okra into 5mm slices, place in a shallow dish and sprinkle with salt.
- Heat the oil in a heavy-based frying pan (skillet) over medium heat, add the onions and fry for about 5 minutes. .
- Add the remaining ingredients, including the okra, and cook for about 6-7 minutes, or until the okra is tender. Garnish with chopped coriander.
