Ingredients
- 6 teaspoons Sesame oil
- 2 teaspoons Mustard seeds
- 6 Green chillies de-seeded and roughly chopped
- 150 g Ginger (1 cup), grated
- 125 ml Tamarind extract (½ cup), thick
- Salt
Instructions
- Heat the oil in a frying pan (skillet) over medium heat.
- Add the mustard seeds.
- Stir-fry for about 1 minute, or until they start to splutter.
- Add the chillies and a pinch of salt and stir fry for 2 minutes.
- Add the tamarind extract and grated ginger and season with salt, if necessary.
- Reduce the heat to low and cook for 5 minutes, or until the ginger is soft and extract thickens.
- Remove from the heat and allow to cool.
- Store in an airtight container.
