  • Heat the oil in a frying pan (skillet) over medium heat.
  • Add the mustard seeds.
  • Stir-fry for about 1 minute, or until they start to splutter.
  • Add the chillies and a pinch of salt and stir fry for 2 minutes.
  • Add the tamarind extract and grated ginger and season with salt, if necessary.
  • Reduce the heat to low and cook for 5 minutes, or until the ginger is soft and extract thickens.
  • Remove from the heat and allow to cool.
  • Store in an airtight container.
