Chatpate Kulche

Ingredients
- 1 tablespoon Vegetable oil
- 1 Tomato large-sized, chopped
- 1 Onion medium-sized, chopped
- 1/2 teaspoon Coriander ground
- 1/2 teaspoon Kashmiri chili powder
- 1/2 teaspoon Cumin ground
- 1/2 teaspoon Chaat Masala
- 50 g Button (white) mushrooms 3/4 cup), cut into dice
- 1 Red or Green (bell) pepper chopped
- 2 Kulcha from the baker
- Salt
- Chutney, such as Sweet Green Mango Chutney or pickle, such as Mango Pickle with Jaggery
Instructions
- Heat the oil in a non-stick frying pan (skillet), add the tomato, and fry for about 5 minutes, or until most of the moisture has evaporated.
- Add the onion together with the ground spices, then season with salt and stir-fry for a further 1 minute.
- Add the mushrooms and continue to cook over high heat, stirring briskly, for 1-2 minutes.
- Sprinkle the chopped (bell) pepper over the top, then remove from the heat and spread the mixture evenly on the kulcha.
- Slice like a regular pizza and serve with a choice of chutney or pickle.
