  • Put the gram flour, chilli powder, 1/2 teaspoon turmeric, and sugar in a large bowl. Season with salt and mix together.
  • Heat the oil in a deep, heavy-based pan over medium heat, add the mustard seeds, asafoetida, and the remaining turmeric and, stir-fry for about 1 minute.
  • Add the green peppers and cook over high heat for a few minutes until they are half tender.
  • Reduce the heat to medium and add the gram flour mixture. Mix well until the peppers are well coated with the flour. Cook for a further 5 minutes until the peppers are crisp and golden.
  • Serve hot, garnished with coriander leaves.
