
Arbi ka Raita

Ingredients
- 6 Colocasias (Taro roots) boiled and peeled
- 125 ml Vegetable oil (½ cup)
- 500 ml Natural (plain) yoghurt (2¼ cups)
- 1/2 teaspoon Chili powder
- 1 teaspoon Cumin seeds roasted
- Salt
- Coriander (Cilantro) leaves Few, to garnish
Instructions
- Press the colocasia between the palms of your hands.
- Heat the oil in a kadhai, wok or deep, heavy-based pan over medium heat.
- Add each colocasia to the hot oil.
- Fry for 2 minutes on both sides until it is crisp and golden.
- Remove from the pan with a slotted spoon and drain on kitchen paper (paper towels).
- Put the yoghurt in a large bowl and add all the spices, then season with salt.
- Add the fried colocasia and mix together.
- Garnish with coriander leaves and serve.
