
Aloo Baigan Sookha
Equipment
- Heavy-based Pan
Ingredients
- 3 tablespoons Vegetable oil
- 2 teaspoons Cumin seeds
- 3 Red chillies dried, broken into 2-3 pieces each
- 2 Potatoes large, peeled, and cut into 8 pieces each
- 1 kg Aubergines (Eggplants) (2 medium long), rinsed and cut lengthways into quarters
- Salt
Instructions
- Heat the oil in a large, heavy-based pan over medium heat, add the cumin seeds and dried red chillies, and fry for 1-2 minutes, then add the potatoes and aubergines and season with salt.
- Saute for 2 minutes, then reduce the heat, cover, and cook over low heat for about 10 minutes, or until the vegetables are done.
- Add 1-2 tablespoons of water, if the vegetables are sticking to the base (bottom) of the pan.
