  • Put the flour, salt and a few drops of mustard oil in a bowl.
  • Mix in just enough water to form a thin batter.
  • Heat the remaining mustard oil in  kadhai or wok until smoking.
  • Then reduce the heat.
  • Dip each spinach leaf in the batter.
  • Fry individually until crisp and golden.
  • Remove with a slotted spoon.
  • Drain on kitchen paper (paper towels).
