Lauki ka Raita

Ingredients
- 1 tablespoon Raisins
- 60 g bottle gourd (calabash) or courgette (zucchini) (½ cup), coarsely grated
- 500 ml Natural (plain) yoghurt (2¼ cups)
- 1 Green chili de-seeded and chopped
- 1 teaspoon Sugar
- 1 teaspoon Cumin seed roasted and ground
- 1/2 teaspoon Mint dried
- Salt
Instructions
- Rinse the raisins in a bowl of water, then drain.
- Cook the grated bottle gourd in a pan of boiling water for about 5 minutes, or until soft.
- Drain and pat dry with kitchen paper (paper towels).
- Then grate again and squeeze it lightly to remove excess water.
- Put the yoghurt in a large bowl.
- Add the grated bottle gourd, raisins and the rest of the ingredients.
- Mix together.
- Chill for 1 hour before serving.
