  • Heat the oil in a kadhai, wok or deep, heavy-based pan over medium heat.
  • Add the onions and fry for about 5-7 minutes, or until brown.
  • Remove the onions from the pan.
  • Spread them out on kitchen paper (paper towels) to drain.
  • Allow to cool.
  • When cool, transfer to a blender, add the yoghurt and process to make a fine paste.
  • This paste can be stored for upto 3 days in the refrigerator.
