Dosai Milagu Podi

Ingredients
- 150 g White Sesame seeds (1 cup)
- 2 tablespoons Vegetable oil
- 1 cup Red chilies Dried
- 300 g Urad dal (1½ cups), rinsed and drained
- 150 g Chana dal (3/4 cup), rinsed and drained
- 70 g Peanuts (1/2 cup), Shelled
- 4-5 tablespoons Jaggery or brown sugar Soft
- 1 teaspoon Sugar
Instructions
- Stir-fry the sesame seeds in a dry frying pan (skillet) over medium heat for about 30 seconds, or until golden.
- Remove from the pan and set aside.
- Pour 1 tablespoon oil into the pan and heat through.
- Add the dried red chillies.
- Stir-fry for about 1-2 minutes, or until fragrant.
- Remove from the pan and set aside.
- Pour the remaining oil into the pan and heat through.
- Add the dals and fry for about 1 minute, or until golden.
- Mix all the ingredients together in a mortar and pound with a pestle.
- Alternatively, grind in a spice grinder, to make a coarse powder.
- Store in an airtight container and use as required.
