Ingredients
- 100 ml Mustard oil (1/2 cup)
- 1 teaspoon Coriander seeds
- 2-3 Red chillies dried
- 500 g Spinach stems removed and chopped
- Salt
Instructions
- Heat the oil in a kadhai or deep, heavy-based pan over high heat, then reduce the heat. Add the coriander seeds and stir-fry for about 1 minute, or until they start to splutter. Add the dried red chillies and stir-fry for about 1 minute, or until the chillies turn a shade darker.
- Add the spinach, mix well, season with salt, stir once again, then reduce the heat to very low, cover, and simmer for about 10 minutes.
- Uncover and simmer for about 1-2 minutes, or until all the moisture has evaporated.
