  • Heat the oil in a kadhai or deep, heavy-based pan over high heat, then reduce the heat. Add the coriander seeds and stir-fry for about 1 minute, or until they start to splutter. Add the dried red chillies and stir-fry for about 1 minute, or until the chillies turn a shade darker.
  • Add the spinach, mix well, season with salt, stir once again, then reduce the heat to very low, cover, and simmer for about 10 minutes.
  • Uncover and simmer for about 1-2 minutes, or until all the moisture has evaporated.
