  • Soak the sago and yoghurt in a bowl of water for about 2 hours.
  • Add the rice flour, onion, curry leaves, chillies and coriander to the sago and yoghurt mixture.
  • Then season with salt and add enough water to makea batter of pouring consistency.
  • Heat a little oil in a frying pan (skillet) over medium low heat and pour a ladleful of the batter into the frying pan.
  • Spread it over the base like a pancake and fry for about 2 minutes, or until golden brown.
  • Flip it over with a spatula and fry the other side for a further 2 minutes, or until golden brown.
  • Transferto a serving plate and repeat with rest of the mixture.
