Ingredients
- 1/2 teaspoon Ghee
- 1 teaspoon Ginger ground
- 4 Green chillies de-seeded and chopped
- 2 Onions finely sliced
- 200 g Semolina (Farina) (1 cup) coarse
- 1 Coriander (Cilantro) leaves bunch, chopped
- 1 Lime juice of
- Salt
For the tempering
- 1 tablespoon Chana dal rinsed and drained
- 1 teaspoon Urad dal rinsed and drained
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 6 Cashew nuts
Instructions
- Heat half the ghee in a medium-sized, heavy-based frying pan (skillet), add the ginger and stir-fry for 1 minute.
- Add all the ingredients for the tempering and stir-fry for about 2 minutes, or until they turn dark brown.
- Add the chillies and onions and cook over low heat for about 4 minutes.
- Bring 500ml / 18fl oz (274 cups) salted water to the boil in a pan.
- Add the semolina to the ingredients in the frying pan, then, stirring constantly, pour in the hot salted water. Continue to stir until all the water is absorbed.
- Add the rest of the ghee and the chopped coriander and cook until the ghee has melted. Remove from the heat, add the lime juice and serve hot.
