Tamba di Bhaji

Ingredients
- 1 tablespoon Vegetable oil
- 1 Onion sliced
- 4 Garlic cloves, chopped
- 2 Green chillies de-seeded (optional) and chopped
- 1 red amaranthus leaves large bunch
- 1 tablespoon Coconut grated fresh
- Salt
Instructions
- Make sure the amaranthus leaves are well washed before using. You may need to wash them about three times to get rid of all the dirt. If you cannot buy amaranthus then use spinach instead. Roughly chop.
- Roughly chop.
- Heat the oil in a large, heavy-based pan over medium heat, add the onion and fry for about 5 minutes, or until they are light golden brown. Add the garlic and chillies and stir-fry for about 30 seconds.
- Add the amaranthus leaves, then cover, reduce the heat and cook for about 15 minutes, stirring occasionally.
- Finally, add the grated coconut and season with salt.
