  • Cut the limes into 8 pieces each and put them in a large glass sterilized jar.
  • Mix all the remaining ingredients together in a large bowl and season with salt.
  • Pour over the limes, shake the jar and mix well.
  • Tie a muslin cloth (cheesecloth) on top of the jar and keep the jar on the window in the kitchen.
  • It will be ready to eat in 15 days. Shake it daily.
