Ingredients
- 5 tablespoons Vegetable oil plus extra for deep-frying
- 1 Onion chopped
- 2 Tomatoes chopped
- 500 ml Coconut milk (2 1/4 cups), fresh or canned
- 300 g Paneer cut into 2.5-cm / 1-inch cubes
- Salt
For the spice paste
- 120 g Coconut (1 1/2 cups) grated fresh
- 8-10 Red chillies dried, shredded
- 1 teaspoon Cumin seeds
- 1 tablespoon Coriander seeds
- Turmeric pinch of ground
- 2 tablespoons Tamarind Extract
- 1 Ginger 2.5-cm / 1-inch piece fresh
- 5-6 Cloves garlic
For the batter
- 75 g Gram (Chickpea) flour (1/2 cup)
- 3 tablespoons Coriander (Cilantro) leaves chopped
- 1 teaspoon Garam Masala
- 1 teaspoon Black pepper ground
Instructions
- To make the spice paste, put all the ingredients in a blender or food processor and process, adding enough water to make a paste. Set aside.
- Heat 4-5 tablespoons oil in a large, heavy-based pan over medium heat, add the onion and, fry for about 5-7 minutes, or until golden brown. Add the tomatoes and cook for 5-6 minutes, or until the oil separates out.
- Reduce the heat to low, add the spice paste and continue cooking for about 10 minutes. Stir in the coconut milk and season with salt. Stir, remove from the heat and, set aside.
- Mix all the ingredients for the batter together in a large bowl and stir in 125ml / 4 1/2fl oz (1/2 cup) water until thick.
- Heat enough oil for deep-frying in a kadhai or deep, heavy-based pan to 180'C / 350'F, or until a cube of bread browns in 30 seconds, then reduce the heat.
- Working in batches, dip the paneer pieces into the batter, then carefully lower them into the hot oil and deep-fry for 2-3 minutes, or until golden brown. Remove with a slotted spoon and drain on kitchen paper (paper towels).
- Place the fried paneer on a serving dish and pour the sauce over the top.
