For the tempering

  • Heat half the ghee in a medium-sized, heavy-based frying pan (skillet), add the ginger and stir-fry for 1 minute.
  • Add all the ingredients for the tempering and stir-fry for about 2 minutes, or until they turn dark brown.
  • Add the chillies and onions and cook over low heat for about 4 minutes.
  • Bring 500ml / 18fl oz (274 cups) salted water to the boil in a pan.
  • Add the semolina to the ingredients in the frying pan, then, stirring constantly, pour in the hot salted water. Continue to stir until all the water is absorbed.
  • Add the rest of the ghee and the chopped coriander and cook until the ghee has melted. Remove from the heat, add the lime juice and serve hot.
